Scramble an egg or two, add anything you wish to the eggs and roll it in a flour tortilla. The best additives, IMHO, are sauted onion (in a bit of water, soy sauce and lime juice rather than oil), chopped bacon (pre-cooked), sour cream and salza. You can also use sausage, ham, cheese, fajita, avocado, refried beans, chilis, celantro, chopped walnuts, hash browns, or almost anything else which rings your bell. It's from the makers of egg beaters. It's egg beaters with seasonings. You can get one version which is a breakfast burrito and another which has onions and bell peppers. I haven't tried them all and not even listed them all; but, if anyone's interested in knowing more, I'll have my wife check it out. Guest guest Posted December 31, 2002 Report Share Posted December 31, 2002 Occasionally I make Cauliflower with an egg batter that is absolutely delicious. 1 cup blanched cauliflower 1 egg 2 Tablespoons water 3 Tablespoons olive oil Cut cauliflower into florets and add to boiling water. Blanch for approximately 8 minutes, until tender but not falling apart. In a separate bowl, mix one egg and 2 T water. Remove cauliflower from pan, pat dry. Gently flatten cauliflower between two sheets of paper towel. In skillet, add 3 T Olive oil and heat. Dip the florets of cauliflower into the egg mixture to coat and then add to the hot olive oil. Fry until lightly browned. Turn and brown other side. *optional..serve with fat free ranch dressing...yummy ! I do know that if you eat in moderation, this recipe has very few carbohydrates but Im sure that the fat content is on the high side.
