Guest guest Posted December 29, 2002 Report Share Posted December 29, 2002 Hi Rita, Sometimes when I get tired of plain old scrambled eggs, I get some cheese, onions chopped up and some taco sauce. This is really good and taco sauce has less salt than ketchup. I also put some nature seasoning which is made by Morton and chili powder in the eggs. I always put a little pepper in. everything blends together and is really good. You can even put some bacon bits in there if you are not on a salt restricted diet. Try adding minced onion and garlic, red and/or green pepper, green onions, minced black or green olives, curry spices, Jamaican jerk spices, Mexican spices, Greek spices, Provincal herbs, Italian herbs, Middle Eastern spices...few things are as versatile as egg salad. I haven't been on any of my lists for a couple of ddays because my puter was down but now we are back for a good while I think. Creative ideas with eggs. Hmmm!!!! One thing I have done is to put a piece of bread inside of a buttered custard cup. Then I put the egg inside, poke the yoke, and bake until desired hardness. It is very yumnmnmnmnmnmnmnmnmnmnmnmnmny!!!! I have a little muffin container that fits in to the micro wave oven as well and I just poach my eggs in there. You have to make sure to poke the eggs before turning on your micro wave or------- well I think you can imagine what happens. There is a really nice ginger sesame seed sauce that I can get in our grocery store here that makes the eggs taste delicious. Hope this helps. Love and hugs, Wishy and Moka kitty.P.S. Batter for me had always to consist of a flour base; but, on refledction, I see you're entirely right and, in fact, a base of eggs may be the solution to some of those batters which baffled my taste buds in the past. We will slice mushrooms, red pepper, eggplant, onions and dip them in the batter and fry, also asparaghus works very well. The batter may be seasoned with almost anything and a generous sprinkle of freshly grated Parmesan or Asiago afterwards is delicious.
