I've left mine in the fridge for months, and it's fine. It changes,

though - starts smelling and tasting a little raw-milk-cheesy the longer it

sits (like, three months later hehe). Personally, I think it's a

wonderful thing - I absolutely LOVE cooking with the older stuff.

Freezing is fine, too - I loaded up on spring butter, which is now mostly

in the freezer. There's a little bit of flavor loss with the

previously-frozen stuff, but it's still wonderful wonderful wonderful.

Hi, I've had the same experience as with raw butter in my frig. I posted a while ago about how I had found a container of old raw butter that was 3/4 eaten and somehow got lost way back in a dark corner for months. I opened it up and it smelled like blue cheese. I love blue cheese. I hesitantly tasted it, and it was delicious. I've considered making lots of butter and storing it in the fridge to age for months just to have that incredible taste. I do want to make it totally clear that there was no visible mold on or in the butter at all. It was in the flavor only. AND, it was raw butter that I had not rinsed with water, though I suspect that would happen even if it was rinsed.

Back then I was eating sourdough french bread on occasion. That old raw butter was to die for with the bread.

AND I suffered absolutely no ill effects whatsoever from eating it. Quite the contrary. I was elated by the discovery and taste treat.

I can only get my butter frozen and I’ve

been stocking up too since I won’t be able to get it over the

winter. It comes in a cardboard

tub-type container and I put that in a freezer bag and suck out the excess air

before I pop it in the deep freeze for long term storage.

Once in the fridge it never lasts longer

than a week.

While we're on this subject, how about leaving it on the table to soften? I know you can do that with commercial butter because of all the preservatives. Can I leave the good stuff out say, a day or so (ok, it probably won't last that long!)
