Baked potatoes

For the past few months my glucose level and I have been quite happy

together. I have found though that if I have a baked potatoe the readings

go out the top. Mashed potatoes and even fries don't seem to have this

effect.

For example, my readings are usually between 120 and 140 after dinner. If

I have a baked potatoe even with just butter the reading is about

220. Weird! Have heard all my life that baked potatoes were better for

you than fried for example. Curious southerners want to know why. <smile>
