Anita! Maybe a little bingo moment here!! I agree BUTYRATE is absolutely fundamental to good bowels as it nourishes and de-inflames the colon. (People with ulcerative colitis have less butyrate.)Butter is high in butyrate but many lactose intolerant people cannot use it. Lactose reduces in fermented butter. This is the type of butter available on the continent and in the 'Old World'. This is probably the 'Sauerrahm (soured butter) Butter' I used to buy in Germany..I don't know where cassein fits into this. Presumably one would have to make Ghee to remove the casein and then you'd have a good butyrate source. Geez and when did butter in general being replaced in North America...in the 80s again...See from Wikipedia:<<Before modern factory butter making, cream was usually collected from several milkings and was therefore several days old and somewhat fermented by the time it was made into butter. My son used to have vomit with no smell. I interpreted this as his being very low in butyric acid. We didn't supplement with it (although you can) but instead started feeding him loads and loads of butter, especially butter left at room temperature for quite some time. This helped him a great deal with his bowels and I believe now his butyric acid levels are normalized.
