The recipes will be in the " Diabetic Recipes " NL that I am preparing. On that I failed to put in the notice of it that I would appreciate you sending your diabetic recipes and cooking information for the blind and it I include this in the NL. I plan on getting the first one out on Saturday and will try to get it out twice a week. If anyone wants the Splenda Information let me know and I will send it to you. The Splenda phone number is 1-. You can call and ask any questions you have on Splenda and you can also ask for coupons to use at your local store provided it is in your area. Also I called the 800 number (1-) for the Glucerna and Ensure Bars and they are going to send me material on both bars, they also have a sign-up list for coupons and other promotional material on them. While talking to the lady at Splenda she gave me the following information on cooking with their granular products: Cakes - instead of 1 cup sugar - use 1 Cup granular Splenda and add 1/2 cup dry milk and 1/2 teaspoon baking powder. Muffins & Cupcakes - for each cup of sugar - use 1 Cup granular Splenda and add two tablespoons of moisture - i.e. unsweetened apple sauce or Sugar Free Log Cabin Syrup (Made with Splenda Now) Cookies - for each cup of sugar - use 1 Cup granular Splenda and add moisture as above. You need to flatten the cookie dough on the baking sheet as it does not spread out when cooking. Guess that's enough for now. Hugs and Love to All!
