Guest guest
Hi Dan, I was interested in the crust ingredients for the chocolate mint cheesecake: all nuts. Does that mean all nuts are low in carbohydrates? What about chestnuts? I know you can buy chestnut flour and, if it's low in carbohydrates, you should be able to make both bread and other baked goods with it. I say " should " because some flours don't work, such as rice flour for cookie making (no good). I notice that Asians do not have a native bread, so rice flour is probably not good for breads either. And, come to think of it, if chestnut flour is low in carbohydrates, you should be able to make pasta out of it, too. Several days ago, I posted a question as to whether soybeans were low in carbohydrates, making reference to soy flour. I never saw my post and, of course, not the response, if there was any. I know the recent virus brought down our servers and my email was undoubtedly lost during the cleanup. But, could you address that issue also, please. Thanks, Walt
Guest guest
Nuts are not created equal where carbohydrates are concerned. However, most nuts are pretty low. For example, it takes 39 peanuts for 6 grams of carbs. Walnuts are nearly carb free as the fiber compensates for most of the carbs,k only about 1 gram per quarter cup, no, per half cup. Pecans have a few more, but not many. Hazlenuts are not bad, Brazil nuts are higher in carbs as are chestnuts, though you can still roast a few on the hearth without worrying about much. Almonds are quite low. In fact, many on low carb diets use almond flour in baking to replace grain flour, it works well and is ver low in carbs.
