It's my opinion that if someone is using a lot of almonds (or any nuts, really)

it is probably worth it to buy them whole, soak adn dry them to remove phytic

acid, lectins, etc., and then grind them with a food processor.

Even people with really healthy guts will often have trouble digesting seeds

(nuts are seeds) because of the enzyme inhibitors in seeds. If you have a

damaged gut, or a restricted diet with high lectins (as in nuts) then the

lectins can cause lots of problems too.

There is also the rancidity issue with nut flours. If you use a lot, even if

you have to buy a food processor to make the flour you'll still save money in

the long run buying bulk almonds and making your own flour. I make it in about

2 pound batches and keep it in the fridge. Even with the soaking and drying,

it's very little extra work.
