Rita, when the brew is finished the next step is to decant the brew out of

the vessel and start a new brew going. I'll tell you what I do, but

everyone works out their own solutions, so this is just one way.

Hands well washed and rinsed, I remove the cloth cover and set it aside,

keeping the inside folded in and making sure to place it somewhere clean.

Rinsing my hands once more in filtered water, I reach in and take out the

SCOBY, placing it in a glass pie plate. I ladle out my reserve starter for

my next batch into a mason jar. Then I ladle a pitcher of KT for immediate

drinking which goes into the fridge. After that, I bottle the

remainder. I use the Grolsch bail-top bottles.

(Bottling really is optional, but KT aged a few days in bottles is

different and delightful. You can just put it all in pitchers or jars in

the fridge. Only thing is, avoid metal lids.)

New brew: I then start the new brew, putting the bulk of my water into the

vessel, and then the smaller amount with steeped tea and sugar dissolved

which cools it immediately. I replace the SCOBY and pour the reserved

starter over it. Replace cloth cover.

Oh thanks very much I was hoping someone would answer :o and now I have it

clear as to what to do. Can't wait until Friday that will be my 7 days - I live

in florida where it is pretty hot right now and I know that has something to do

with the length of the brew as well.........thanks again Rita
