If you are concerned there is a book that may put your mind at rest. It is rather old now, but a classic. "Unraveling the mystery of Autism and PDD" by Karyn Seroussi. It is the story of how she recovered her son using the GFCF diet. He ended up being able to eat only rice and chicken, and as far as I know that's still all he can eat as a teenager. She goes through the diet challenges, adding things because of feeling his diet was too restrictive, poop explosions, etc., probably all the things you are dealing with.

This was written before the SCD diet was embraced by the Autism community, but it is about a mom's diet challenges and her son's ultimate recovery, so I really like it.
