At least in my attempts. happens as the kombucha fails to replenish itself. or so I theorize. I do not encounter that if I add 25% Camellia Sinensis (tea) to the ferment. That's what I based by conclusions on Yerba Mate, Rooibos and other herbal teas relation to kombucha. At least it is an easy enough experiment for people to do at home themselves and maybe others will give it a go. live free and healthy Ed Kasper L.Ac. The health benefits of Kombucha tea as we know it are from a brew made with the Camelia Sinensis (tea) plant and sugar but it is possible to make Kombucha from just Kombucha, sugar, and water.... He made huge sheets of the Kombucha Colony from which paper was then made. Interesting! Kombucha had also been used for bandages and drum heads etc.....amazing substance.
