Audrey. Camelia Sinensis 3-5 grams (one teaspoonful or 1-2

t-bags) + 10-12 grams herbal teas (yerba mate)

1/4 = 25% real tea (Camelia Sinensis) + 3/4 = 75% herbal

tea

The most often quoted amount of tea is 5-7 t-bags, or 15

grams (1/2 ounce) loose tea per 3 quarts of water.

The overall amount of tea (herbal or otherwise) does not

seem to matter to the kombucha.

One pretty much uses as much tea as their personal taste

dictates.

The anti-pathogenic effect of KT may be attributed it the

acetic acid (~1%). Numerous specific testing indicate that

the KT inhibitory effects may also be attributed to

catechin and polyphenols in Camelia Sinensis. As a result,

green tea may have more anti-microbial activity than black

tea with herbal teas may have less or zero effect. I do not

know of any testing of kombucha grown with herbal teas.

Dear Ed, thank you for your answers. I was hoping to try KT

with Yerba

Mate soon. How much is 1/4 part, in a 3 quart jar?

Oh, and I think the KT Drops would get enough air each time

the bottle

was opened daily or more.

Appreciate the info about Ziplocs, and shipping

temperatures.
