When I was a really little girl cream and butter were all I wanted to eat and blueberries, then I was shamed out of that . . . funny how life turns out . . . Actually, what I do is add a couple of Tablespoons of finished kefir to 4 cups of cream and leave at room temp for 8 hours or so. Then refrig for about an hour and then make the butter. Thanks to this group, I have very flavorful butter, just for the asking! So, don't be afraid to ask. This group is very knowledgeable about all things RawDairy. The remaining liquid from making the butter (called buttermilk BTW) is thick. I pour it in ice trays, freeze and then drop them in my kefir fruit smoothies. Yumm Ohh, and sometimes when making the butter, I have to say that I'll open the food processor after it's whipped up a bit and take out a small portion and sweeten with a little dribble of agave nectar and a couple of drops of vanilla and eat it with a spoon.
