Guest guest
Just tasted my most recent brew this morning. It has an extreme acidic bite to it. It was a two week brew that from SCOBYs produced in my last 4 batches - my SCOBYs have been fusing together recently and I can't separate them without tearing it. All brews before this have had a pleasant tang, but this batch may end up being used for salad dressing. Has anyone else encountered this? My thoughts about why this may have happened are - 1. Recycling my SCOBYs too many times 2. Insufficient air space at the top of my jar - the jar was nearly 3/4 full 3. Chance/dumb bad luck - the SCOBY is a living thing that you can't control all the time.
