Hi San, your brew sounds great, and it's the liquid part of the culture that really matters (all full of bits of yeasts and bacteria that make up the 'culture' together with the scoby on top .... As someone else said today already, thin cultures are quite normal, especially when a new brew establishes itself. It sounds, as though your brew is stronger on the yeast side already, and it would be wise to discard the yeast sludge on the bottom of your brewing container every time to prevent a yeast overgrowth. The scoby cellular hat-mat is fashioned by the bacteria in the brew. It looks as though they need encouraging and you can do that by keeping the yeasts under control.
