I bought the book " The Healing Miracles of Coconut Oil " by Bruce Fife and that explains pretty much what you need to know about coconut oil. It is very healthy. I use it in fruit smoothies, on my morning bagel (if I don't have fresh raw butter) I bake with it, I cook eggs with it. My husband cooked up lamb's liver and onions in it last night. I have made coconut mayo (although I'm still working on the recipe). About the same time I also when very low carb for about 2 weeks. Most of the time I'm fairly low carb, but I have some grains, definitely have pizza about once a month, high quality chocolates etc. And to date, without exercise (shame, shame!) I've lost 15 pounds. I eat lots of coconut oil and raw butter/cream daily. I also eat the fat on the grass fed beef. Not only are these fats nourishing, they actually help to lose weight - I know, it doesn't sound right, but the scales don't lie!) I'd have dropped more off but the carbs just keep bombarding me. As for canola oil, the only canola in the house is the Spectrum Canola Mayo for my husband (he doesn't like my coconut mayo). They have some good articles and explanations of why and how coconut is so good for you. Some others have posted some of the other good sites for info, too. I would also recommend a book by Fran McCullough called Low Carb, Good Fat with 100 Recipes even if you aren't a low carber (I have to be with my hypogllycemia). She does a superb job of explaining all the fats in an easy to comprehend way. Her's is one book I will be keeping -- right next to NT. I have bought the oil from Coconutoil-online three tiems now and it is the best I've had so far. I would add though, that I don't like to fry things like chicken with it - it is just so fruity and coconutty that that flavor comes thru in the chicken Eeewww! But it makes mean banana bread and pancakes, and smoothies and .... and ... and.... Her book Low Carb, Good Fat, with 100 Recipes sounds right up your alley. The recipes are as good as the book. She has several cooking related books that are very informative. Worth a look-see. BTW, I just found Spectrum Canola mayo for the first time day before yest. It is good! I gotta have my mayo. When it runs out I had planned on making some with some milk olive oil. I just recently got a 5 gal bucket of it. Not quite enough to bath in it, but... It's very nice. Cold centrifuged at or below 79F. They also sell a fermented EVCO that is a little cheaper. My choice at the time were these and Coconutoil-online. It was a toss up in my mind. Both sounded great. I have consumed the VCO from Tropical Traditions for 2 and a half years now and am wondering if the VCO from Coconutoil-online would be better, worse or the same? For the person who wanted opinions on coconut oil compared to canola, coconut oil is far superior to canola oil. Read what Sally Fallon and G. We use coconut oil as a food at home, most often to make popcorn with (arguably, we shouldn't eat corn, lol). I've often wondered about heating it to high temperatures for this purpose. But I notice on the site provided it talks about reducing inflammation. Kathleen Kendall-Tackett gave a presentation at LLLICf in Chicago (was that 2006? 2007?--it's all a blur) about using fish oils/DHA for the reduction of PPD since it also reduces inflammation. I wonder if coconut oil would serve the same role, as it would certainly be a preferable option for vegans. It does NOT make mothers gain weight who eat it and can actually support increased metabolism and gut healing. I have all of my clients whose babies are needing to gain weight or whose milk supply is low eating both EFAs from fish oil or salba and coconut oil. I also have moms with oversupply using these fats as well b/c they reduse inflammation, which is, IMO, the underlying issue for almost everyone. A couple books that do discuss adding coconut oil to one’s diet as a positive step include Nourishing Traditions and Eat Fat to Lose Fat. There is other good reading material on coconut oil and beneficial fats but I thought I would add those two to the list.
