Kombucha

Never heard of them, or the issues that they speak of. I got my SCOBY

locally, have been making kombucha for months now, and never had a problem.

I would be interested in finding out why the sky is suddenly falling, but

other than that, no worry...

Have any of you spoken with Laurel Farms about making

kombucha? She seems to be very freaked out by anyone

not getting a mushroom directly from Laurel Farms, and

talks a lot about toxicity relating to improper

handling of the mushroom, and if you get a scoby from

someone else, you don't know how they prepared it, etc

and it could be toxic.

Has anyone had any problems with this, and is anyone

worried about it? Thanks in advance.

I'm not a bit worried about getting cultures from random people. After a

few cycles, the acid kills pathogenic bacteria, and the smell can tell you

if you got any harmful molds.

It means you have relatively more bacteria than yeast than normal. Len

Porzio, the author of the article, thinks that is quite ok, because the

kombucha is fine, but since it is fun and tasty to have fizzy kombucha, he

gives some suggestions, such as using a bit less sugar at the start and

adding some in the middle, using a bit more green than black tea, letting

it stand at room temperature for a few days after it is done and separated

from the scoby, and a few other things...

Hi ,

I've been making Kombucha for about 15 years. In this time I have learned something that really makes a difference in the fizz of our Kombucha. While the tea is fermenting it's important to NOT move the jar in any way. We put our jars in a safe place where they won't get bumped or jiggled. My feeling - and this is only what I've seen happen here - is that if the culture is allowed to seal with the edge of the jar as it grows on the surface of the tea, then it will seal the tea, which allows the carbonation, or fizz to develop. To us it really does make a difference.

Okay........what is a scoby???? Can you use the gallon jars that sun tea are made in with the plastic lids, and does anybody have any mushrooms to sell or to share.

Absolutely. Wish I had one so I could use the continuous method (draw it

out through the spigot and add more sweetened tea through the

top...forever).

I was given this advice and have tried it and like it. When you

decant your kombucha into jars add one or two berries. Cap the jar

or bottle and leave on the counter for another day before putting in

the frig. This works, it is not only fizzy, but has a beautiful

color and a nice taste. I use a couple of wild blackberries, fresh

if I have them or frozen which I always seem to have.

You may have already been answered, as I haven't been through all the posts

from last night...

Symbiotic Culture Of Bacteria and Yeasts

It looks like a tan/brown wad of rubber. It's used to make a tea

concoction called kombucha, that is a very vitamin-rich health drink that

many of us on this list partake of. If you are interested, and since you

are local (aren't you up in Magnolia?), let me know and I can hook you up

with one. It's good stuff.

Some people use that kind of tea jars, but lots of folks don't like them

because the acids in the kombucha can/may break down the plastics. I use

some old pickle jars to ferment, then transfer it to a pitcher for storage

in the ice box...

Hi all!

I made my first batch of KT, and I had a really, really thin baby.

I threw it out thinking it was...well I don't know what I thought it

was!! But I didn't think it was a baby. Oh, well. There was also

the same type of thing on the bottom of the jar - did I have 2

babies???

Both were thin and gel-like, but very sturdy. Do you guys think I

had 2 babies, or were they even babies at all?

Also, does anyone know of a good source of organic black tea? I

haven't been able to find it at WF or Central Market or my local

health food store.

Well, you should have had your original SCOBY, then usually (at least on

mine) the baby grows right on top of the 'old' SCOBY. Sometimes it (old

one) sinks, and you get the new one on top. I don't remember ever seeing

the new SCOBY growing anywhere but on top.

Hi Fran,

If you have to watch caffeine, use naturally decaffinated tea when you brew your

batch. I use half black & half green tea - so good. , you got the

translation right. In my formative years, I had 5 years of Latin taught by the

good Sisters of St. ph!

Is there anyone on the list who may know where in the SC Midlands I could get

raw cow's milk?
