I got my SCOBY locally, have been making kombucha for months now, and never had a problem. I would be interested in finding out why the sky is suddenly falling, but other than that, no worry... She seems to be very freaked out by anyone not getting a mushroom directly from Laurel Farms, and talks a lot about toxicity relating to improper handling of the mushroom, and if you get a scoby from someone else, you don't know how they prepared it, etc and it could be toxic. After a few cycles, the acid kills pathogenic bacteria, and the smell can tell you if you got any harmful molds. Len Porzio, the author of the article, thinks that is quite ok, because the kombucha is fine, but since it is fun and tasty to have fizzy kombucha, he gives some suggestions, such as using a bit less sugar at the start and adding some in the middle, using a bit more green than black tea, letting it stand at room temperature for a few days after it is done and separated from the scoby, and a few other things... In this time I have learned something that really makes a difference in the fizz of our Kombucha. While the tea is fermenting it's important to NOT move the jar in any way. We put our jars in a safe place where they won't get bumped or jiggled. My feeling - and this is only what I've seen happen here - is that if the culture is allowed to seal with the edge of the jar as it grows on the surface of the tea, then it will seal the tea, which allows the carbonation, or fizz to develop. Cap the jar or bottle and leave on the counter for another day before putting in the frig. This works, it is not only fizzy, but has a beautiful color and a nice taste. I use a couple of wild blackberries, fresh if I have them or frozen which I always seem to have. Rhonda who for a change isn't playing with her kefir grain tonight. Symbiotic Culture Of Bacteria and Yeasts It looks like a tan/brown wad of rubber. It's used to make a tea concoction called kombucha, that is a very vitamin-rich health drink that many of us on this list partake of. If you are interested, and since you are local (aren't you up in Magnolia?), let me know and I can hook you up with one. It's good stuff. Some people use that kind of tea jars, but lots of folks don't like them because the acids in the kombucha can/may break down the plastics. I threw it out thinking it was...well I don't know what I thought it was!! But I didn't think it was a baby. Oh, well. There was also the same type of thing on the bottom of the jar - did I have 2 babies??? Both were thin and gel-like, but very sturdy. Do you guys think I had 2 babies, or were they even babies at all? Also, does anyone know of a good source of organic black tea?
