Ron looks OK.

the yeast are actively producing and can be seen in the

bubbles being trapped as the SCOBY forms. This may end with

a rougher than normal surface and is not a concern. 3-4 more

days your SCOBy should be 1/8 - 1/4 inch thick. Don't worry

if there are bubbles or not trapped within the SCOBY.

Using a SCOBY helps protect the start from mold and other

wild yeasts and bacteria from taking up residence. It also

provides a more complete balance of the various contributors

to the SCOBY, where just using just the tea has a more

limited production value.

i started a new batch 5 days ago with just starter and tea.

i can't tell if

this is yeast or mold that is growing. i've never made KT

without a scoby

and this one is growing all weird!
