Hamburger) : " Ensemble des phénomènes pathologiques, spécifiques ou non, dus à une insuffisance de disponibilité d'une ou de plusieurs vitamines. Les avitaminoses sont le plus souvent dues à une carence des apports alimentaires mais peuvent aussi provenir d'une insuffisance d'absorption digestive ou d'utilisation. La quantité de vitamines nécessaire pouvant, par ailleurs, être fonction du niveau calorique, notamment glucidique, de la ration.
