If you just add 2 cups of spinach into the diet per day you could knock out a bunch of supplements! The World's Healthiest Foods by Mateljam This book is amazing. It has all of the vegetables, fruits, meats, spices broken down into nutritional content. It tells you how to wash, store and the healthiest way to cook each one without losing out on the nutrients. It has recipes and even tells the oxalate content, etc. Right now I'm reading the part where it lists a vitamin or mineral - then has a chart listing the foods with the highest amount. I bought this book because I'm trying to figure out how to get our diets up to par without taking supplements. If you need help from a nutritionist to get variety into the diet, Mathews in San Francisco was a great help to me. She is uber knowledgeable about our kids biochemistry and lectures at DAN and other biomed conferences. My son's diet restrictions were a nightmare - GFCF, low phenol, low oxalate, low protein (for high ammonia) and restriction of 40+ food sensitivities. Plus no artificial anything. She was able to work with it all to come up with a bunch of recipes and helped with a rotation plan. http://www.healthfulliving.org http://www.nourishinghope.com She does phone consultations if you are too far away for a person-to-person visit. Warning - she is NOT cheap. It was totally worth it for me though, because I just couldn't figure it all out by myself when I first started. It was WAY too overwhelming for an uninspired cook like me. I eventually bought a good microscope with a polarizer to figure out my son's oxalate tolerance level at any given time (add up the $$ in lab fees, it equals a microscope pretty quickly!). His ability to eat medium oxalate foods without producing crystals in his urine is increasing now his gut is healed and his krebs cycle is functioning normally (most of the time). It took a couple of years though...... I still haven't tried spinach yet.
