>> I use a Vitamix blender to make ice-cream.

We used to use the Vita-Mix, but now we use a Rival Ice Cream Maker. I

strongly recommend using a real ice cream maker. The Vita-Mix ice cream is

too cold to enjoy, and rather icy. The real stuff is easy to make and is a

much better quality. We usually make 2 subsequent gallon batches so we have

enough in the refrigerator to last a couple of days :-). One thing to watch

for if you're getting an older, used model.. make sure that you don't have

to use crushed ice. The older ones have a seam on the outside of the

canister that catches on whole cubes.

I have the Rival 1.5 qt freeze cylinder icecream maker and I can tell

you NOT to buy that one - I would go for the cuisinart if you get one

- it' a bit more expensive but the rival one has a problem with the

aluminum deforming on the bottom after about 5 or 6 uses. I have to

put it all together and put the whole thing in the freezer (motor and

all!). If I don't the lid won't fit on becuase the bottom bubbles up

and forces the paddle up to high. I also have an old waring model

that was given to me by a friend and it works well.

Plain old table salt works too, and it's cheaper...

We have no trouble getting rock salt up here in Wisconsin. Wouldn't water

softener salt work as well?
