The actual yeasts and bacteria contributing to the ferment are the major components. Lesser bacteria and yeasts that may be present would be dormant or non-productive. Kt is a probiotic as it generally contains Bacterium gluconicum, Bacterium xylinum, Acetobacter xylinum, Saccharomycodes, Schizosaccharomyces pombe, and to a lesser extent Zygosaccharomyes, Saccharomyces cerevisiae. These bacteria and yeasts will not produce lactic acid. They will produce acetic acid, glucronic acid and fructose. If lactic acid is present it would be considered only a minor amount. In regards to GT's I have not analyzed his ferment. He says there is Lactobacillus bacterium and S. boulardii which would produce a lactic acid ferment. Which he says is in there. There may be other ingredients as well maybe even acetic acid, however I have no way to know that and GT did not volunteer any more information than what was on his label. Lactic Acid is a more popular " health fad " while acetic acid is viewed as - sour. maybe GT is just riding the popularity crest. He does claim glucuronic acid but does not claim any acetic acid. If someone wants to really know and understand this marvel called Kombucha than one has to dissect and deeply investigate it without prejudice. For me that is the purpose of this list. In addition, if KT is a probiotic, wouldn't it have the acidophilus bacillus in it? You previously stated that GT's label indicates that it's a lactic acid ferment, and I was saying that I didn't think the mention of the presence of lactic acid (or the other terms used) equates to a statement of being a lactic acid ferment. No doubt the label is carefully designed, but the fact of their having knowledgeable marketing consultants in touch with current needs and trends does not mean that the product isn't worthy (nor that the statements being made are untrue). It only means they know how to present it to get " heard " .
