Since kombucha is a home ferment and various sugars and

fermenting times as well as different bacteria and yeasts

are all used creating very different brews no values would

be accurate. My best guess would be to try the type of sugar

your using and use 8 grams carbs as a rough idea. You could

also try a home diabetic testing unit to determine some

glucose values and then calculate based upon the type of

sugar used.

Does anyone know the glycemic index of Kombucha?

Is it high?
