re: low carb kids and my ice cream recipe--OT

Hi everyone,

I am a definite low carber myself being a severe hypoglycemic - meaning I eat no white flour, no refined or processed foods and I eat no sugar or sweets made with real or fake sugar. I have to be sure than I eat protein with EVERY carb I eat, otherwise I am off in hypo-fit-land. :) I know what you mean about low-carb meaning different things to different people. There are soo many variations, aren't there? I knew kids needed carbs for energy and growth so I haven't halted their veggie carbs at all - but I have drastically limited their grains and cut out 99.8% of the sweets and junk and sugar, I've also cut out refined and processed foods and all white flour. They do eat cereal, shredded wheat usually (as a snack once in a blue moon) and granola breakfast bars with raisins & honey in them (again as a snack now and then) and they still love Malt o Meal and oatmeal. I think that's all the grains they ever get

now. I've been using almond meal to make healthy cookies and a very cool pound cake.

We have all noticed that since we changed our diet and quit all the sweet things that other foods taste sweet naturally - like plain yogurt which we could never stand before. Also, there are some veggies now that are almost too sweet for our tastes. It's a whole new world. It is amazing, too how sweet a glass of fresh raw milk tastes. MMMmmm.

I haven't tried tea ice cream. Sounds good though. I love green and oolong tea. Please pass those recipes along when you can!! :)

This is my recipe for ice cream - actaully it was my grandmother's recipe - Dorothy Ellen Howald. I have made it with sugar occassionally but it is always too sweet & rich - even before I quit sugar. I use an electric ice cream churn, but Grandma Howald always used the hand-crank when she made it. Many people cook their mixture before freezing it, I've never done that. I didn't want to cook away anything that might be good for us. We always made it with raw stuff. Before we used RawDairy this was still great ice cream. Let me know what you guys think. And noone has ever gotten sick eating the raw eggs inspite of all the wailing from the family naysayers ! lol :)

Grandma Howald's Homemade Ice Cream

6 fresh yard eggs

2 tsp vanilla

3-4 vanilla beans - scraped to get the good stuff (I boil mine for a few seconds for make them easier to cut in half & scrape)

4 cups fresh heavy cream

Fresh whole milk to fill the container to the fill line for freezing (as per instructions for your maker)

1 Tbsp cornstarch or flour

Optional Additions for another flavor experience: 1 cup triple strength espresso or 2 cups chocolate chips or 2 tsp cinnamon or fresh fruit (a little or a lot, you decide, it will all freeeze), for rocky road flavor we use 1 cup chopped almonds, 3/4 cup cocoa powder and stevia to sweeten to taste.

In a large bowl, mix all ingredients except milk to add to fill-line. Pour into ice cream bucket and add milk to fill line. Follow your machine's instructions for freezing. Enjoy!

NOTE: Grandma always left the flour/cornstarch out. I'm not sure why really. It only changes the texture a slight bit. My hubby likes it better without it, I like it in....
