If it tastes tart and lively, it's ready. There is a wide range of what " ready " means, from mildly tart to vinegary. People should harvest at the point the KT tastes good to them, as long as it is tart and doesn't still taste like sweet tea. We've spoken recently about tasting the KT by taking a plastic drinking straw and twirling it down the side of the SCOBY, choosing a point where the SCOBY is pulling away from the side if possible.
