Here is what works for me, as I drink about 1/2 - 1 C. KT a day (and share

with my Mom too)

I have two nice, fat scobys working for me. My second SCOBY grew from my

original one.

Each are in their own 1 gallon glass jar, topped with a coffee filter (not

bleached) secured with a rubber band.

When my 1st brew jar hits 7 days old, I start my second jar. I like my KT

at around 12-14 days (nice and tart). I keep up this cycle, using 2 C. aged

brew to add to the next jar, etc. Does that make sense? This system keeps

me continually in KT that is about 12-14 days old.

PS: I brew using Earl Gray Tea and green tea. YUMMY! I've never had a

batch go bad yet.......knock on wood!
