You don't want to refrigerate the SCOBY or remaining starter liquid (reserved for next batch) In a one-gallon brew, you need to retain about 1-2 cups of starter; I use 2 cups. You don't have to wait. Once you decant, you can make a new batch right away. I recommend removing the SCOBY and reserved starter to temporary containers and putting them back on top after you've gotten your sweetened tea in the vessel. This ensure that the top of the liquid is acidified. See my last post for more info on method. >Can you drink too much of the tea? Guest guest Posted April 25, 2006 Report Share Posted April 25, 2006 That's exactly what you do with the starter tea (25%) and the Mother or baby, (your choice) Yes you do leave it on the counter. By putting it the refrigerator, you slow down the ferment and it becomes sluggish. Always leave the starter tea out. I usually brew my tea the night before I am going to decanter. Then the new fresh tea is ready to start a new batch when you decanter. Hope this helps, Myrna Can I now just make the tea and after it cools pour it on the 25% starter?
