At first I kept opening it up and checking the temperature, but I think it stopped the scoby forming properly, it started to sink then a membrane formed on top of the liquid again, so appear to have two very thin membranes, with the mother culture on the bottom of the bowl I'm going to bottle in a couple of days, it's still slightly sweet.
