Hi Cori, Although proper Kombucha Tonic IS best fermented with proper tea (Camellia sinensis) it is possible to use herbal teas for Kombucha brewing. I should suggest you keep one brew pure, brewed only with proper tea, but make several other batches using the recipes in your book. Label your jars well, stating what kind of tea/herbal tea you have used. It is very easy to get into a muddle. I would not use the 'babies' coming from the herbal batches to ferment proper Kombucha again as it is possible that certain benefits may disappear when herbal teas alone are used. I have done part herbal and part proper tea quite successfully, but always come back to 'pure Kombucha' only. IMHO, nothing can beat the REAL thing brewed with real tea. Happy experimenting!
