say that i see any side effects, except maybe a

firming of my oldest's bowels. how long after do you

see the results? barb

After being strict GFCF eggless/cowless for 4 yrs

we've been able to reintroduce eggs into 's diet (thru

muffins, cakes, and such) and *some* wheat

(ie sweet / sour Korean chicken where the tempura is made

of rice/corn starch and some wheat flour) but alas,

so far he hasn't been able to tolerate wheat nor 'fake' white bread.

we'll keep trying .......

donna, is it true that dr. g approaches the glutein

restriction differently in that he allows a white

bread with not milk or sugars? i've been on gf/cf for

2 years with my kids and i would love to be able to

offer them some homemade white bread fitting that

description. anyone have any experience with being on

strict gf and then going to this? barb

Wheat is wheat is wheat.....  I don't toleate one bite of it.  Ironic since I

baked all of our own whole wheat bread for about 30 years!

That's a good point about carb overload. Does white bread cause you to be

tired like wheat bread?

Carb overload raises your blood sugar an hour or two after eating,

making you sleepy - but is gone in about 4 hrs.

Wheat response (might be bad right away as well but) always is bad

the NEXT day, so you start out feeling low and unenthusiastic, and

awful.

I try to eat high protein.

My fillers are wild rice, artichokes, rice snaps (some of which make

cardboard taste good and others of which are very yummy - so find

YOUR favorites) and such.

and lots of green veg. And I cheat and use cheese with rice snaps.

Also I sometimes fill on things like nuts and my own " trail

mix " (depends on budget) that I assemble from whatever takes my fancy

in the bulk section.

Millet works for me too (mixed with rice or separately), and omelette/

egg things.

A nice mix of high color veg filled out with rice is a backstop.

I'm very much into spices and herbs to make food interesting.

Namaste,

Irene
