Awesome . My family are also enjoying it too, when we can.Sadly though our Whole Foods have been out of stock for 2 1/2 weeks, told them that there is a demand for this product. Then was told that they are having problems with the marketing part but of course sent a shout out to the Daiya company to inform them of this.

We shall see how this goes because it has certainly added a variety of meals back into the picture, especially for my son. Sounds yummy on your meal preparation, glad everyone enjoyed it. Irma

My son is loving the Italian blend on his zuchini/spinach pizza. I just saw that Amy's frozen meals are starting to use this too. It's still a processed food and something I believe to be considered a treat for special occassions rather than the new staple at the meal table. However, I'm so happy to have something for my son. I was shredding yellow squash (looks like cheese shreds) and then I'd toss in some hot ghee/garlic/celtic salt to make a cheese topping for pizza.

Last weekend we made " loaded baked potatoes "

Grilled vegetables BBQ: zuchini, mushrooms, yellow squash, red onions

Shred the vegetables in the food processor and add a tiny amt of Annie's bbq sauce to resemble shredded beef.

We topped our baked potatoe with:

shredded vege/bbq

raw cultured butter

celtic salt

turkey bacon cut into bits

cultured vegetable blend: cabbage, beets, carrots, garlic

DAIYA cheddar blend

Even my husband " a BBQ beer guy " loved it!
