DEar Shari,

The beet kvass doesn't always get fizzy--but you may have better luck by

letting it keep in the fridge for several weeks. You can just lift the mold

off and as long as it smell all right, you can drink it. It doesn't have to

be fizzy to give you health benefits. Sally

I am looking to try my first attempt at beet kvass tonight. I'm not

too excited because I got my beets (organic) at the regular grocery

store and then they hung around in the frig for a while. I also

used whey from yogurt that had been in the frig for about 2 months

(NT says it will keep in the frig for about 6 months). The question

is: a small amount of slimy clear skin has developed on the top of

the pitcher. Is this OK and normal?

ps I actually see a very few small bubbles being generated.
