Awesome idea of grating the stem. You could grate the cabbage too and mix it with your usual salad. They both would be good and look pretty too. Leena

i've found a few tricks for cabbage. Nappa cabbage and other varieties

dont have that sulfury smell when you cook them. I grew up on Irish &

German cooking and can't stand cabbage cooked in any of those manners.

I thought I hated cabbage until eating it the way the Japanese cook

it. Sauted in terryaki sauce, stir fried with yakisoba noodles, fine

cut and made into a salad....

perfectly edible in my opinion, unlike any other version of cabbage

that i grew up on.

now if i could just get better at stir frying it....

sounds of encouragement, alternate ways of cabbage preparation,

thanls Laurie, yes it is difficult parting witht the old ways of meal

preparation, I was raised by a mother born in north america, but her

mother was from England, and consequently I was raised on food which

was prepared the way my mother and her sisters were taught to cook.

It's interesting to see how slow the generations change. I'll be on

so I stuck my kneck out saying what I said. I'll try stemming the

You can pick up bottles of terriyaki sauce at the store and use a non

stick pan and throw in a little oil and cook the cabbage and add a

little terriyaki sauce.

there's 2 ways to do it, on low and saute or stir fry on high heat and

cook it really fast. you can try it both and see which you like best.

I like both, but i find i tend to over cook it or do something wrong

when I saute it, some of the stir fry noodle shops in my area do it

better, so i buy theirs, but my stir fry turns out OK most of the

time, and I found a store that sells 2 serving packs of yakisoba

noodles in the produce case and i'm really enjoying throwing those in

with it.

Laurie, I was just thinking about this cabbage, the variety I was

talking about is a large round cabbage, about the size of a volly

ball or a small soccer ball. And the part that is very tough and

rubber like is the portion of the leaf that is attached to the lower

stem

the greenish leaves on the outer part are okay for me to consume. I

was referring to the hard rubber like portions.

My guess is that in Japan the cabbage is more like an oriental

cabbage in the shape of long sturdy stalks.

I hope there is no confusion.

I had oriental cabbage done Korean style, it was found at a dim sum

buffet I attended. The spice used was very hot, like that of a hot

red cayene pepper. But the stalk was a bit tough for eating, hard

rubber like plant stalks.

yeah that's the traditional cabbage i was used to as a child, i never

much cared for it. some of the asian places around here use it

because it's cheaper, others go the napa cabbage route or even some of

the fancier varities. but i'm not talking about the varieties that are

more like bok choy.

but i like it if it's cooked by a good japanese chef, they know how to

keep it from coming out rubbery and i think as far as the tough stems,

i think that depends on the weather and how large the cabbage is

allowed to grow, how close to seeding (bolting) it is, and how long it

has sat before beign cooked. Chinese brocolli (gai lan) is bitter if

allowed to bolt. and many of the cabbage relations get really tough

stems and i dont care for them. choi sum and i forget the other names.

Koren veggies tend to be pretty spicey, i like it though sometimes

it's too hot for me.

i really prefer the japanese style cooked cabage. didnt go buy any

today. it's still on my mind though!

Thanks Laurie, I don't how far we can take this chat about cabbage,

since I'm not a cabbage fan, but I will accept colesale with dinner,

and boiled cabbage as a 2nd or 3rd vegetable on my dinner plate.
