They both would be good and look pretty too. I grew up on Irish & German cooking and can't stand cabbage cooked in any of those manners. I thought I hated cabbage until eating it the way the Japanese cook it. Guest guest Posted June 12, 2007 Report Share Posted June 12, 2007 You can pick up bottles of terriyaki sauce at the store and use a non stick pan and throw in a little oil and cook the cabbage and add a little terriyaki sauce. there's 2 ways to do it, on low and saute or stir fry on high heat and cook it really fast. you can try it both and see which you like best. Guest guest Posted June 12, 2007 Report Share Posted June 12, 2007 Laurie, I was just thinking about this cabbage, the variety I was talking about is a large round cabbage, about the size of a volly ball or a small soccer ball. And the part that is very tough and rubber like is the portion of the leaf that is attached to the lower stem the greenish leaves on the outer part are okay for me to consume. I was referring to the hard rubber like portions. My guess is that in Japan the cabbage is more like an oriental cabbage in the shape of long sturdy stalks. I hope there is no confusion. I had oriental cabbage done Korean style, it was found at a dim sum buffet I attended. The spice used was very hot, like that of a hot red cayene pepper. But the stalk was a bit tough for eating, hard rubber like plant stalks. Guest guest Posted June 13, 2007 Report Share Posted June 13, 2007 yeah that's the traditional cabbage i was used to as a child, i never much cared for it. some of the asian places around here use it because it's cheaper, others go the napa cabbage route or even some of the fancier varities. but i'm not talking about the varieties that are more like bok choy. but i like it if it's cooked by a good japanese chef, they know how to keep it from coming out rubbery and i think as far as the tough stems, i think that depends on the weather and how large the cabbage is allowed to grow, how close to seeding (bolting) it is, and how long it has sat before beign cooked. Chinese brocolli (gai lan) is bitter if allowed to bolt. and many of the cabbage relations get really tough stems and i dont care for them. choi sum and i forget the other names.
