What's the point in leaving nutrients in the soil anyway? Isn't the idea

behind growing food is so we can get nutrients for our bodies from the soil

that the plants extract for us? I can certainly understand replenishing the

soil, but purposely not rotating crops in order to keep nutrients in the

soil? What for? I don't follow this line of logic. What am I missing here?
