I am not saying I know all the scientific aspects of this, just trying to give you all something do-able! I spread the garlic cloves out in a pan and drip some olive oil over top and roast in the oven until soft and browning. Then I blend it---the consistency of butter. This can keep in the fridge for many days and can be spread on anything. I spread it on my gluten-free crackers and keep the vampires away! Of course many Korean recipes include eating with whole cloves of garlic and a side of ginseng if you are good friends, now that's the way to go!!
