Guest guest Posted April 16, 2006 Report Share Posted April 16, 2006 Happy Easter all and a healthy one too. I'm about to get started on making Easter dinner and it's non-traditional. Decided to do a healthier version so no ham or potatoes. Instead salmon baked with some butter and white wine and spices (New York Times Cookbook recipe cutting a bit of the butter out), pasta salad with shiitake mushrooms, cherry tomatoes and artichoke hearts, and green beans steamed then sauteed in olive oil and covered in a sweet and sour soy sauce mix with almonds. Dessert is the only really bad for you part with sour cream apple pie and mango sorbet. I'm going to bake it half and half with Splenda and sugar (pure Splenda makes the taste a bit off to me). Anyhoo, this is part of my continuing effort to learn how to cook healthier. In the past I would serve guests some dish doused in butter which always made it wonderful, but could stop your heart. I would love to hear other people's ideas for healthier holiday cooking.
