I'd ask your fellow students what they think a herbalist does, in a brainstorming session at the start, and ask if any have visited a herbalist (don't get depressed when they all say 'I'm under the chinese doctor' as my customers so frequently do). You could ask 'what question would you most like to ask a herbalist' at some point. Put answers on a flip chart or board. good luck with that. The best question asked on my stall so far was " Do you do donkeys?'. Being honorable of course I said no.
