Nuts seem like an ideal snack especially for busy people who do not tolerate starchy foods. I was following the Specific Carbohydrate Diet in conjunction with NT principles (treating IBS and candida) with mixed results. That diet allows no starch (or sucrose) and recommends ground almond meal to make muffins and breads. The almond muffins hold together really well, taste good, and are very filling -- an ideal substitute for starchy or sugary snacks. So I was using lots of almond meal, which I could buy blanched but not pre-soaked. When I read about nuts & enzyme inhibitors in NT, I got worried about the almond meal. So I started eating wheat again (but no rice, potatoes or corn), trying to stick to " real " sprouted grain and sourdough breads. (I am a student and work, too busy to do much cooking beyond standard dinner & breakfast.) When Sally posted that pistachios are generally pre-soaked I started eating those as a snack. But they are too salty and make me terribly dehydrated. I think I'd like to go back to the nut muffins instead of bread. I can get blanched almond flour but it's not pre-soaked. Lactose is in dairy, and I only recommend butter. That's because the rule about lactose is: " The higher the butterfat content, the lower the lactose. Well that depends upon whether your digestion is good/normal or not, since nuts are very hard on your digestive system, so they should also be ground up. Most almonds are now being irradiated so you don't want to eat them. Some nuts are off limits: -Cashews are too high in carbs & not properly processed even if raw. - Pastachios and peanuts contain fungal-type toxins. Yes, they are okay on the candida diet. I've written about almonds in many messages. Most almonds are now being irradiated (zapped with radiation) in most countries, so check your area for regulations. If you can get them non-irradiated they are okay too.
