Question on chicken marinades in NT

I am wondering about some of the chicken marinades in the book. In particular,

I was looking at " Spiced Chicken Breasts " and " Sesame Buffalo Wings " . In both

recipes it says to use the marinade on the finished product. These both had the

raw chicken soaking in it and has not been heated up. Is this okay?. Isn't it

true you have to worry about food poisoning? The chicken I use is home grown

with organic feed (with soy I am afraid) and ranged. Thanks for any help.

I would reserve some of the marinade before soaking

the meat, to have some to use after it's cooked that

hasn't had raw chicken in it.
