Making butter

If we should be so lucky as to find a source of raw milk, we are

wondering how much we will need. We want to make our own butter but

don't have any idea about quantities: How much milk does a cow

produce in a single day? How much of the milk, on average, is

cream? Ho much butter do you get from a given amount of cream?

Therefore, how many gallons of milk do you need to make, say a pound

of butter? And finally, what do you do with the leftover stuff, i.e.

the skimmed milk left behind when you take the cream to make butter?

I haven't run across any uses for skim milk--in fact it seems to be

an altogether bad thing.

We will appreciate any advice or experience you may have.
