Guest guest Posted June 30, 2001 Report Share Posted June 30, 2001 Here is our family's favorite recipe with the changes I made in parenthesis... 1 egg 1 c. sugar (I used 1 c. Sucanat) 1/2 c. salad oil (I was out of olive oil so I mashed up 1 banana instead) 1/2 c. shortening (I used melted butter) 1 Tbsp. molasses 1/4 c. milk (I used water with 1 Tbsp yogurt) 1 3/4 cup rolled oats (soaked overnight and drained well) 1 c. raisins 1 1/2 c. flour ( I soaked part of it in the water/yogurt mixture) 1/2 tsp baking soda 1 tsp. cinnamon 1/2 tsp salt I soaked the oats overnight, and however much flour I could mix with the water and yogurt in a separate bowl overnight. I beat the egg, then added rest of ingredients and mixed well. Drop from a spoon on a cookie sheet and bake at 325 for 10 to 15 minutes. The normal consistency of this cookie without my changes is nice, kinda chewy and soft, but these turned out more cakey...it could have been the banana addition. I'm not sure...
