I am looking for cookbooks, books for raising vegan kids, and books on the other aspects of veganism such as why milk is not healthy and other health or ethical issues. I will look when I go home tonight and send you a list of books and titles. One that I can think of off-hand is a magazine called " Living Without " . An excellent magazine for people who are on restricted diets - Either Casein free or Gluten free or Wheat-free. The web site is http://www.livingwithout.com/. I have not looked into complete veganism as my son is so picky - the only thing he would eat on a vegan diet is tomatoes :-) I will email you tomorrow with our library. Guest guest Posted February 20, 2004 Report Share Posted February 20, 2004 Marilyn, Here are the books we have on Special Diets: The Milk Free Kitchen by Beth Kidder Special Diets for Special Kids - Volumes 1 & 2 By Feast without Yeast - I forgot to write down the author :-( Also there is a wonderful website http://www.kinnikinnick.com/ that has many special diet foods - it is very difficult to find dairy-free wheat free breads in a local supermarket. Here is a favorite Cookie recipe that I have modified to be dairy free - it is also Vegan. Do not use soymilk in this recipe it does not work - I have tried twice but the club soda does substitute for milk in many recipes very well. 2 3/4 cups of Quaker 1 minute oats 1/2 cup creamy peanut butter 1 teaspoon vanilla ------ 2 cups sugar 1/2 cup cocoa 1/2 cup club soda (originally called for milk) dash of salt 1/2 cup Crisco (originally called for butter) Prepare the first 3 ingredients to be ready. Put tin foil on 3 cookie sheets or just get tin foil ready to be used. Put out a trivet next to the cookie sheets. Put the last five ingredients in a medium/large sauce pan. Over medium-high heat bring to a full boil stirring often. Let boil for a full minute stirring constantly. Remove from heat and put on trivet. Add the vanilla & peanut butter - stir well. Fold in the oats. Working quickly - drop by teaspoonfuls or half teaspoonfuls onto tin foil. They will harden quickly. Depending on the size of the cookie can make either 3 dozen or 6 dozen.
