On the one hand, we should drink only whole milk, but on the other hand, we should eat lots of fresh butter. I think one of the reasons I've been putting off making butter, is that I don't know what I'll do with all the skim milk I'll have left over. I don't want to waste it! So somebody just reassure me it's ok to make lowfat cheese or yogurt! ) How is the skim milk leftover from making butter traditionally used?
