Guest guest Posted December 22, 2003 Report Share Posted December 22, 2003 4 servings shoulds use natural unpasturized cheese... 1 lb emmenthaler cheese or 1/2 emmenthaler and 1/2 gruyere rub a heavy saucepan with garlic into pan pour 2cups dry white wine...heat uncovered on moderately high heat. In a mixing cup add 3 tablespoons kirsh or brandy for flavour and then dissolve 1 teaspoon cornstarch. your pan of wine should be " smiling " with fine foamy bubbles but not actually boiling, Add coarsely grated cheese stirring constantly. keep highheat but not boiling. add all grated cheese until stirring gets slight resistance. Add kirsch mixture while continuing to stir vigoursely. continue cooking until mixture thickens. Transfer to dipping pot with low heat. add nutmeg, white pepper and paprika... dip and enjoy. crunchy veggies , apples, pears are great. With wintery winds and frosty crinkles on the window and the warmth from the glow of warm friends close at hand you cant but enjoy this cheesy extravagance. sigh, if no special proper cheese is at hand , I have made do with munster and havarty, ,,, melted warm cheese is always delicous... you may also substitute apple juice or cider as well for wine...
