Guest guest Posted December 18, 2003 Report Share Posted December 18, 2003 I'm not saying these are healthy...but they are GF and delicious. I adapted my mother's recipe (calls for wheat flour). PECAN PUFFS 1/2 pound of butter (one stick) 2 T. sugar or sucanant 1 c. pecans, measure, then chop medium fine 1 t. vanilla 1/2 c. sorghum flour, 1/2 c. tapioca flour, 1/2 t. xanthan gum (blend together) 1/4 t. salt (if butter is unsalted) Powdered sugar Beat the butter until soft and then add the sugar. Add the chopped pecans and vanilla. Add the flour mixture. Roll into 1 inch balls and place on a buttered baking sheet. Bake for 25-30 minutes in a 300 degree oven. Roll in powdered sugar while the cookies are still hot. These basically explode in your mouth--absolutely yum. I made them with one stick of butter, a quarter pound, not a half pound. I wasn't sure about the amount of butter, but I looked at other similar recipes and this is what I came up wiht and it worked. I decided to take some Rapadura sugar and grind it super fine in my food proessor( a blender would work too) and then I added a little cinnamon to the powdered Rapadura. In this way I avoided the refined powdered sugar. Now I am having trouble not eating them all beore Christmas. I had better get them off the kitchen counter and on to gift plates as fast as possible. They have been vanishing around our house. I rolled them into half inch balls instead of the usual 1 inch size. These cookies are rather dry and to much at one time in the mouth feels a little too dry for me. The large test size one I baked made me me want to grab a quick swallow of milk. They stay just about the same size as before they are baked,so they can be placed fairly close together on the baking sheet. A one bite cookie is sort of fun.I like them because they are not overly sweet and have a rich buttery nut taste. Have fun baking. They are exactly like the Pecan Puffs recipes! I got the recipe from my husband's grandmother. We have been enjoying this recipe for years. It is one of our fav's! I will have to change it like you did for gluten free this year. I think I will add a little cinnamon too! Sounds great! They are really hard to keep from eating. Is this the same Sheila that I have been talking to about calcium on another list? I have ordered Cal-Ma Plus, Biost and Zypan. Recently I have increased my HCl to 5 caps per meal and have already seen some changes for the better in my cea and digestion. So far as I am educated, I believe getting enough digestive enzymes and HCl are the key ingredients to building bone and tip top health, through effcient digestion. There are probably other important endocrine functions which are important, but of these I am rather ignorant. At least the Cal-Ma Plus has parathyroid to aide in calcium untake for a couple of months. I feel hopeful these products will help me. I continue happily on the NT whole foods diet. It remains the foundation to my good health. Sheila P.S. The Joy of Cooking has a Pecan Puff recipe. Maybe your husband's grandmother used it.
