Being from birch bark rather than sap it could be naturally white. Its not

necessarily 100% birch from what some websites say. Really wish this was

done with a simple process rather than " patented process " whatever thats

supposed to mean, our secret to owning a plant product more like it. Maple

syrup and honey both bother my hypoglycemia. Would be nice if northern

latitude native birch sugar was available in a non scary form.
