Guest guest Posted January 2, 2004 Report Share Posted January 2, 2004 When we were thinking of going for USDA inspection we found that the inspectors do not inspect meat. The USDA inspector inspects paperwork which is filled out by the folks working for the meat processor. There is a lot of paperwork which means that there is most likely a person who fills it out and doesn't have much contact with the meat processing. There are hourly checks on cooler and freezer temps with charts and signatures and all that fancy stuff. While they were visiting we talked about not giving the customer something that we ourselves wouldn't eat. I told them we tossed the stuff that fell on the floor. Their solution was to make a contaminated tub and develop a cooked product (like bologna I guess). Don't you love it? Here I am telling them we toss it (really goes to the chickens) and they tell me to feed it to the public! There main concern seemed to be a private office with 1/2 bath and locking files.
