What is the best way? I already bought a " Mother of Vinegar " . I also bought a glass sun- tea-like containter, but it has a brass spout. If I remember correctly, I shouldn't use any metal, right? If I remember >correctly, I shouldn't use any metal, right? Heidi V.: I just put the mother in a suntea container ( a cheap one with a plastic spout) with some so-so wine. I plugged the " hole " in the top with a piece of material glued over it (you want air to get in, but not flies). Put it in a dark cupboard and wait a few months. A " mother " will form on the top. Now, if you drain the vinegar and add more wine, the mother will sink and die. So, I " floated " the mother on some old wine corks, and now she floats! In the old days they did this sometimes with wood shavings. Or, you can use a glass tube to " insert " your wine UNDER the mother, but the mother really sinks very easily, so I think corks are the way to go. The vinegar is delish! The second batch will be much faster, once you have a mother going. The " mother of vinegar " they sell doesn't usually have a real mother in it. The mother looks like a kombucha mat. -- Heidi S.
