Yep, I use it! The beef I got, I took all the kidney fat (leaf lard) and

rendered it (it really is the

easiest and " cleanest " ) and put it in jars. It is great for frying, and actually

tasty in

pastries too, but the flavor isn't one the family is used to. If you use it for

a pie, for instance, the pie is INCREDIBLY filling. One half a piece and you are

DONE.

I think I like it better too, though healthwise I think coconut oil has other

bennies.

One real advantage is that it is pretty much FREE when you get a steer (or

rather,

you pay for it one way or the other). And in this case, I know the source,

though

olive oil is likely from a decent source (do they spray olive trees nowadays?).

Actually, I know almost nothing about olive trees. So have no idea if they

are sprayed or not.

Hmmm. Guess I should look it up.

Question my use of tropical coconut and avocado fats. Weigh the

environmental cost in transportation vs. the health benefits vs. the maybe

some of them are raised by small farmers who actually get paid fair. If

this state says not to eat deer liver because of possibility of drinking

contaminated water there isn't much animal fat i'd trust to rendering as

toxins accumulate in fat.
